杭州君悦酒店新任命——行政总厨Nicholas Richard Blair。来自澳大利亚的Nicholas从小就对烹饪产生了极其浓厚的兴趣,在职业生涯中不断开辟新的烹饪创意和精湛的美食呈现。
从幼年时期,Nicholas就跟着父亲学习如何做饭,对烹饪有着独特的见解和至深的喜爱。从那以后,他在悉尼和墨尔本最好的几家餐馆工作过,并取得了成功,之后相继在墨尔本植物园酒店和悉尼丽思卡尔顿酒店工作。来到亚洲后,Nicholas继续着自己对美食的追求,曾任职于香格里拉,洲际,费尔蒙等多家知名国际品牌酒店,积累了二十余年的丰富工作经验。任职杭州君悦酒店行政总厨一职前,Nicholas于武汉费尔蒙酒店作为开业团队成员担任行政总厨职位。
Nicholas 拥有康奈尔大学双硕士学位证书,包括酒店管理专业硕士以及酒店管理策略、营销和财务管理专业硕士。对寻找新鲜的当地产物及世界各地的优质食材的热情,时刻钻研前卫时尚的烹饪技术,这些经历和经验都使他的美食之道备受追捧。
Nicholas成功地在亚洲各地运行着从100至5000人的大型宴会活动,中国长城时装秀晚宴是他个人的最爱,同时2008年的北京奥运会经历也使他激动与喜爱。2015年他在上海浦东香格里拉领导团队一起打破了“最多人抛掷披萨饼面团”吉尼斯世界纪录,活动所有售卖所得悉数捐献给“超越意识”癌症防治公益协会的康复患者。充分展示了他高超的领导管理技能,以及从精致宴会到大规模活动的高品质工作能力。

Chef Nicholas Richard Blair has been appointed Executive Chef of Grand Hyatt Hangzhou. Hailing from Australia, Nicholas has been passionate about cooking since he was very young. He constantly developed new cooking ideas and has mastered the art of exquisite food flavour parings and presentation.
During his childhood, Nicholas gardened and cooked with his father, which gave him a unique insight into, and deep love for, cooking. Since then, he worked successfully in some of the best restaurants in his native country including Botanical Melbourne and Ritz Carlton Sydney. After coming to Asia, Nicholas continued his pursuit of food. He has worked at Shangri La, Intercontinental, Fairmont and other well-known international hotel brands, and he has accumulated more than 20 years of rich working experience. Prior to becoming executive chef of Grand Hyatt Hangzhou, Nicholas served as executive chef of the opening team of Fairmont Hotel.
Nicholas successfully oversaw banquet operations ranging from 100 to 5000 people in exclusive locations throughout Asia, among which The Great Wall of China fashion show dinner was his personal favorite, and experienced the Beijing Olympics in 2008 as well. When he was working in Shangri-La Pudong, Shanghai, he made the – Guinness Book of Records 2015 ‘Breaking record for the most amount of pizza throwing at the same time’ for the “More than Aware” Breast Cancer Foundation which fully demonstrated his superb leadership management skills and driving quality from boutique events to large scale operations.
Nicholas earned two master certificate in hospitality management and essentials of hospitality, as well as certificates in strategic hospitality management, hospitality marketing and financial management from Cornell University. His experience and passion for finding fresh local products and the best ingredients in the world, while embracing avant-garde technology, is what makes his cuisine popular.

With years of experience and a passion for delicious food, Nicholas will work with his team at Grand Hyatt Hangzhou to bring us an extraordinary culinary experience through continuous research and the development of new cooking skills and methods using a selection of high-quality raw materials.
